Crockpot Oatmeal – a revelation!

This morning was the best morning I have had in a while! It should not have been, as my alarm went off at 4:30am so that I could study for my accounting final but despite that not-so-nice fact, I had a wonderfully relaxing and refreshing morning. The secret? Crockpot oatmeal!!!

Here’s another secret: I don’t even like oatmeal! At least, I thought I didn’t until I tried this incredible recipe. It seems that I’ve been doing it wrong all this time – this recipe uses steel cut oats instead of rolled oats (who knew you could get different kinds of oats?!) and adds fresh fruit as a garnish. Don’t worry about the price of the oatmeal, it cost us $5 but I do think we will get about 20 or so breakfasts out of it, you do the math on that one! Me + Oatmeal = NBF’s (new best friends for those who, like me, are not up to date and have to Google things like YOLO and such).

The reason that this recipe was such a revelation was because I was able to do all the dirty work the night before and wake up to an already made, warm and inviting breakfast.

Perfectly Creamy Crockpot Oatmeal:

1 cup steel-cut oats (I used Quaker oats, 5grams of protein too!)

4 cups water

1/2 cup milk

1/4 cup packed brown sugar

2 tbsp butter

1 tsp cinnamon

1/2 vanilla extract

pinch of salt

Directions: Spray the crockpot with non-stick spray, and add all the ingredients. Stir it pretty well, set on low and go to bed! Leave overnight and when you wake up it the morning give it another good ol’ stir before serving with fresh fruit of your choice or Chris had it with maple syrup and said that was yummy too!

Waking up to this in the morning = blissful!
